Ingredients
- 2 cups butternut squash, peeled and grated
- 1 egg
- 1/2 cup sour cream
- 1/2 cup white flour
- 1/4 cup cornmeal

In a large mixing bowl, beat the egg and sour cream together until smooth using a whisk.
In another mixing bowl, combine the white flour, cornmeal, baking powder, salt, ground cinnamon, ground cumin, chili powder, and cayenne pepper. Whisk these dry ingredients together to ensure even distribution of the spices.
Gradually add the dry ingredients to the wet ingredients, stirring with the whisk to create a smooth batter with no lumps.
Fold in the grated butternut squash, minced fresh garlic, and finely chopped onions into the batter, using a wooden spoon or spatula until they are well incorporated.
Heat a tablespoon of olive oil in a skillet over medium heat on the stove.
Once the oil is hot, spoon the batter into the skillet to form small fritters. Do not overcrowd the skillet; cook the fritters in batches if necessary.
Cook the fritters for about 3-4 minutes on each side or until they are golden brown and the edges start to crisp up.
Transfer the cooked fritters onto a plate lined with paper towels to drain any excess oil. Allow them to cool slightly.
