- 3 lbs sweet potato, peeled and cut into fries

Directions
Preheat the oven to 425°F (220°C).
Line a baking sheet with parchment paper.
Place the peeled and cut sweet potatoes into a large mixing bowl.
Drizzle the sweet potatoes with olive oil and toss until evenly coated.
In a separate small bowl, combine cayenne pepper, garlic powder, dried oregano, ground cumin, salt, ground black pepper, and cornstarch.
Sprinkle the spice mixture over the sweet potatoes and toss until the fries are well coated with the spices.
Arrange the sweet potatoes on the prepared baking sheet in an even layer, ensuring they are not touching each other for even cooking.
Place in the preheated oven and bake for 25-30 minutes, turning them halfway through the baking time, until they are crispy and golden brown.
While the sweet potatoes are baking, prepare the honey molasses dip. In a small bowl, combine honey, molasses, balsamic vinegar, and water. Whisk well until the ingredients are fully incorporated.
Remove the sweet potato fries from the oven and let them cool slightly before serving.
Serve the spiced sweet potato oven fries with the honey molasses dip on the side.
