  • 500g sweet potatos, peeled and cubed
  • 240g black beans, drained and rinsed
  • 80g whole grain flour
  • 80g white flour
  • 2 carrot, grated
  • 120g oat milk
  • 1 tablespoon tahini
  • 1 teaspoon baking powder
  • 1 teaspoon crushed chili peppers
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 red bell pepper, diced

Directions

Preheat the oven to 200°C and line a baking tray with parchment paper.

Place the cubed sweet potatos on the prepared baking tray, drizzle with 1 tablespoon of olive oil, and sprinkle a pinch of salt. Toss to coat evenly and bake for 25 minutes, or until tender.

Meanwhile, in a mixing bowl, combine whole grain flour, white flour, baking powder, crushed chili peppers, ground cumin, garlic powder, and 1/2 teaspoon of salt. Mix well.

In a separate mixing bowl, mix oat milk, tahini, maple syrup, and the remaining 1 tablespoon of olive oil. Whisk until well blended.

Add the wet ingredients to the dry ingredients and stir using a wooden spoon until just combined. Do not overmix.
