Ingredients
- 1/2 cup honey
- 1/4 cup peanut butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground cinnamon
- 4 cups popcorn, popped
- 1/2 cup rice krispies
- 1/2 cup oat crunch cheerios
- 1/4 cup brown sugar
- 10 dates, pitted and chopped
Directions
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper and set aside.
In a pot over medium heat, combine honey, peanut butter, vanilla extract, salt, cayenne pepper, ground cinnamon, and brown sugar. Stir constantly until ingredients are well combined and the mixture becomes smooth and slightly thickened, approximately 5 minutes.
Remove the pot from heat and allow the mixture to cool for 2 minutes.
In a large mixing bowl, combine popped popcorn, rice krispies, oat crunch cheerios, and chopped dates. Toss to mix.
Pour the warm honey-peanut butter mixture over the popcorn mix, stirring until everything is evenly coated.
When the mixture is still warm but cool enough to handle, lightly grease your hands with a small amount of vegetable oil and shape the popcorn mixture into small, golf-ball-sized spheres. Place each ball on the prepared baking sheet.
Once all the balls are formed, place the baking sheet in the preheated oven and bake for 10 minutes, until the balls are set.
Remove the baking sheet from the oven and let the popcorn balls cool completely. They will firm up as they cool.
Serve the sweet and spicy popcorn balls as a tasty snack or wrap them individually in plastic wrap for easy on-the-go treats.
