Ingredients

  • 1 cauliflower, cored and roughly chopped into small pieces
  • 2 carrots, peeled and finely diced
  • 2 parsnips, peeled and finely diced
  • 1 onion, finely chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 teaspoon fresh ginger, finely grated
  • 1 teaspoon curry powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions

In a large skillet, heat the vegetable oil over medium heat.

Add the onion and cook until it begins to soften, about 5 minutes.

Add the diced carrots and parsnips to the skillet. Cook, stirring occasionally, for another 5 minutes, until vegetables are tender.

Add the chopped cauliflower to the pan. Continue to cook, stirring frequently, for 10 minutes, until the cauliflower is cooked and begins to brown.

Stir in the soy sauce, fresh ginger, curry powder, ground cumin, dried oregano, salt, and pepper. Cook for another 2-3 minutes to let the flavors meld together.
