Ingredients

  • 1 cup couscous
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 onions, diced
  • 2 carrots, diced
  • 2 red peppers, diced
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/4 cup raisins
  • to taste ground black pepper

Directions

In a kettle, bring water to a boil.

In a large bowl, pour boiling water over couscous. Stir in salt, cover, and let stand for 10 minutes.

While the couscous is soaking, heat olive oil over medium heat on your stove.

Add diced onions, carrots, and red peppers to the pan and sauté until they are tender.

Stir in the ground cinnamon, ground cumin, and ground turmeric.

Fluff the couscous with a fork and stir in the sautéed vegetables and raisins.

Season the couscous with ground black pepper to taste.

Serve the cinnamon spiced couscous while warm.
