  • 2 cups carrot, grated
  • 1 cup white sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups white flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts
  • 250g cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups icing sugar
  • 1 tsp vanilla extract

Directions

Preheat the oven to 180°C (350°F) and grease a 9-inch round cake pan.

In a large bowl, combine the grated carrot, white sugar, vegetable oil, eggs, and vanilla extract. Mix well.

In a separate bowl, whisk together the white flour, baking powder, baking soda, salt, and ground cinnamon.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the crushed pineapple and chopped walnuts.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

In the meantime, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter until creamy.

Gradually add the icing sugar and vanilla extract, beating until smooth.

Once the cake has cooled, spread the cream cheese frosting evenly over the top and sides of the cake.
