Ingredients
- 500g chicken, cut into pieces
- 2 red peppers, diced
- 4 heirloom tomatoes, diced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon ground black pepper
- 2 tablespoons olive oil
- 3 cloves fresh garlic, minced
- 1 yellow onions, diced
- 1 liter chicken broth
- 200g couscous
Directions
In a skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until they're browned on all sides. Remove the chicken from the skillet.
In the same skillet, add the diced red peppers, onions, and minced garlic. Cook until they're softened.
Add the diced heirloom tomatoes to the skillet. Stir in the cumin, chili powder, and black pepper. Cook until the tomatoes break down and the spices are well incorporated.
Return the chicken to the skillet. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20 minutes, covered.
While the chicken is simmering, bring a pot of water to a boil. Add the couscous and cook according to the package instructions. Drain the couscous when it's cooked.
Serve the spicy tomato chicken over the couscous. Enjoy your meal!
