Ingredients

  • 6 slices turkey breast, diced
  • 1 cup quinoa
  • 1 egg
  • 1/2 cup crackers, crushed
  • 1 green onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup hummus
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crushed chili peppers
  • 1 tablespoon olive oil

Directions

Preheat the oven to 400 degrees Fahrenheit.

Cook the quinoa on the stove according to the package instructions. Set aside to cool.

In a mixer, combine the diced turkey, cooked quinoa, egg, crushed crackers, chopped green onion, garlic powder, and cayenne pepper.

Shape the mixture into small balls and place on a baking sheet.

Bake in the preheated oven for 20 minutes, or until cooked through and golden brown.

Meanwhile, prepare the spicy hummus dip. In a blender, combine the hummus, ground cumin, and crushed chili peppers. Blend until smooth.

Heat the olive oil in a pan over medium heat. Add the spicy hummus dip and stir for 2-3 minutes, until heated through.

Serve the baked turkey quinoa balls hot with the spicy hummus dip on the side.
