Ingredients

  • 8 raw chicken drumsticks
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon steak seasoning
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon table salt
  • 2 cloves fresh garlic, minced
  • 1 cup couscous
  • 1 1/2 cups vegetable broth
  • 1 tablespoon lemon juice
  • 1 cup frozen edamame
  • 1 tablespoon soy sauce

Directions

Preheat the oven to 375°F. In a small bowl, mix together olive oil, dried thyme, dried rosemary, dried oregano, steak seasoning, cayenne pepper, paprika, ground black pepper, table salt, and minced garlic to create a spicy marinade.

Place the chicken drumsticks in a roasting pan. Rub the chicken evenly with the spicy marinade, ensuring each piece is well-coated. Let the chicken marinate in the refrigerator for 20 minutes.

Remove the chicken from the refrigerator and let it come to room temperature for about 10 minutes. Then, bake in the preheated oven for 40 minutes or until the chicken is fully cooked and the skin is crispy. Flip the drumsticks halfway through cooking.

While the chicken is baking, bring 1 1/2 cups of vegetable broth to a boil in a wok. Stir in the couscous and lemon juice. Remove from heat, cover, and let stand for 5 minutes. Fluff with a fork.

Place frozen edamame in a microwave-safe dish and cook in the toaster oven's microwave setting for about 3 minutes, or until warm. Season the edamame with soy sauce and a pinch of salt.

Serve the spicy oven-baked chicken drumsticks alongside the couscous and soy sauce seasoned edamame.
