Ingredients
- 2 tbsp olive oil
- 1 onions, diced
- 1 tbsp fresh ginger, minced
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/4 tsp ground black pepper
- 2 lbs carrots, peeled and sliced
- 4 cups vegetable broth
- 1 tsp salt
- 1 tbsp honey
Directions
Heat the olive oil in a pot over medium heat.
Add the diced onions, minced ginger, ground turmeric, ground cumin, and ground black pepper. Stir continuously for about 5 minutes until the onions are soft and fragrant.
Add in the sliced carrots, vegetable broth, and salt. Bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 20-25 minutes, or until the carrots are soft.
Remove the pot from the heat and let it cool for a few minutes.
Transfer the soup to a blender. Be careful as it will be hot. Blend until smooth.
Return the soup back to the pot. Stir in the honey and heat the soup for another 2-3 minutes on low heat.
Serve the Ginger Carrot Soup warm. Enjoy!
