Ingredients
- 1 miniature pumpkin, halved and seeds removed
- 1 tablespoon honey
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/2 teaspoon vanilla extract
- 2 teaspoons instant coffee
- 2 cups 2% milk
- to taste whipped cream
Directions
Place the halved pumpkin in a pot with enough water to cover it. Bring to a boil on the stove and cook until the pumpkin is soft and easily pierced with a fork. This should take about 10-15 minutes.
Once the pumpkin is cooked, remove it from the pot and let it cool. Once cooled, scoop out the flesh and discard the skin.
Place the pumpkin flesh, honey, ground cinnamon, ground nutmeg, ground cloves, vanilla extract and instant coffee in a blender and blend until smooth.
Pour the milk into a pot and heat on the stove until it is hot but not boiling. Pour the hot milk into the blender with the pumpkin mixture and blend until frothy.
Pour the latte into two cups and top with whipped cream and a sprinkle of cinnamon, if desired. Serve immediately while hot.
