Ingredients
- 4 duck legs
- 1 tsp ground turmeric
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/2 tsp crushed chili peppers
- 1/2 cup brown sugar
- 1/3 cup balsamic vinegar
- 1/4 cup water
- 1 bunch mustard greens, chopped
Directions
Preheat the oven to 180°C (350°F).
In a small bowl, mix together ground turmeric, cayenne pepper, paprika, salt, onion powder, and garlic powder.
Rub the spice mixture all over the duck legs.
Heat vegetable oil in a wok over medium-high heat.
Add the duck legs and sear them for 3-4 minutes on each side, until golden brown.
Transfer the duck legs to a baking dish and roast in the preheated oven for 30 minutes, or until cooked through.
In the same wok, add the sliced onion, minced garlic, and crushed chili peppers.
Sauté for 2-3 minutes, until the onion becomes translucent.
Add the brown sugar, balsamic vinegar, and water to the wok.
Bring the mixture to a simmer and cook for 5 minutes, until the sauce thickens slightly.
Add the chopped mustard greens to the wok and toss to coat in the sauce.
Cook for an additional 2-3 minutes, until the mustard greens are wilted.
Serve the roasted duck legs over a bed of spicy mustard greens.
