Ingredients
- 2 cups mashed potatoes
- 3/4 cup quick oats
- 1/2 cup cornmeal
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1/4 cup white flour
- 2 eggs, beaten
Directions
Combine quick oats and cornmeal in a blender until they are finely ground.
Mix the ground oats and cornmeal, onion powder, garlic powder, salt, and ground black pepper in a shallow dish.
In another shallow dish, place the beaten eggs.
Dip each mashed potato ball first into flour, then eggs, then in the oat-cornmeal mixture.
Place the coated mashed potato balls on a baking sheet and freeze them for about 15 minutes to set the coating.
Preheat the air fryer to 400 degrees Fahrenheit.
Brush the air fryer basket with vegetable oil.
Remove the mashed potato balls from the freezer and place them in the air fryer basket without them touching each other.
Cook for 10-12 minutes, or until golden brown and crispy, turning halfway through.
Let them cool for a few minutes before serving.
