Ingredients

  • 8 chicken drumsticks
  • 6 roma tomatoes, finely chopped
  • 1 cup long-grained rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt

Directions

Preheat the oven to 375 degrees Fahrenheit.

In a small bowl, mix together garlic powder, ground cumin, paprika, cayenne pepper, dried oregano, dried thyme, ground black pepper, and salt.

Rub the spice mixture evenly over the chicken drumsticks.

Place the seasoned chicken drumsticks in a baking dish and bake in the preheated oven for 45 minutes, or until the chicken is fully cooked and has a crispy skin.

While the chicken is baking, heat the olive oil in a medium saucepan over medium heat.

Add the finely chopped roma tomatoes to the saucepan and cook for about 5 minutes, stirring occasionally, until the tomatoes break down and become saucy.

Add the long-grained rice to the saucepan with the tomatoes and stir to combine.

Pour the vegetable broth into the saucepan and bring the mixture to a boil.

Reduce the heat to low, cover the saucepan, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.

Remove the chicken from the oven once it is cooked and let it rest for a few minutes.

Serve the baked chicken drumsticks alongside the garlic rice topped with the tomato sauce.
