Ingredients

  • 1 cup bulgar
  • 2 cups 1% milk
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon honey
  • 1/2 cup dried sultana raisins
  • 1/4 cup chopped pitted dates
  • 1/4 cup toasted sesame seeds
  • 1/4 teaspoon salt

Directions

In a medium pot, bring 2 cups of 1% milk to a simmer over medium heat on the stove. Be careful not to let it boil.

Once the milk is simmering, whisk in 1/4 teaspoon of ground cinnamon, 1/8 teaspoon of ground nutmeg, and 1 tablespoon of honey. Stir until the honey is fully dissolved.

Add 1 cup of bulgar to the pot. Stir well to combine.

Reduce the heat to low and simmer the bulgar, covered, for about 12-15 minutes, or until it is tender and has absorbed most of the milk.

While the bulgar is cooking, chop 1/4 cup of pitted dates and set aside.

Once the bulgar is cooked, remove the pot from the heat. Stir in the chopped dates and 1/2 cup of dried sultana raisins.

Divide the bulgar mixture evenly among 4 bowls.

Sprinkle each serving with toasted sesame seeds and a pinch of salt.

Serve the bulgar breakfast bowl warm, allowing the spices and sweetness from the fruit to infuse the bulgar.

It's surprisingly light and fluffy!

Very pleasant kind of middle eastern tasting breakfast dish. I expected a kind of "heavy porridge" type consistency, but instead it was rather light and fluffy. I didn't care for the salt topping, so you might leave that off.
