Ingredients

  • 500g ground beef
  • 1 head cabbage, chopped
  • 1/2 cup bulgar
  • 3 tomatoes, diced
  • 2 celery stalks, diced
  • 1 yellow onions, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon paprika
  • 2 teaspoons chili powder
  • 1/4 cup ketchup
  • 2 cups vegetable broth
  • 1 tablespoon hot sauce

Directions

Preheat your oven to 375°F (190°C).

In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the diced onions and celery. Cook until the onions are translucent, about 5 minutes.

Add the ground beef to the skillet. Break it apart with a spatula and cook until browned, about 8 minutes.

Stir in the diced tomatoes, 1 teaspoon of salt, 1/2 teaspoon of ground black pepper, 1 tablespoon of paprika, and 2 teaspoons of chili powder. Cook for another 5 minutes, allowing the flavors to meld.

Mix in the chopped cabbage, 1/2 cup of bulgar, 1/4 cup of ketchup, 2 cups of vegetable broth, and 1 tablespoon of hot sauce. Stir well to combine.

Transfer the mixture to a casserole dish. Cover the dish with aluminum foil.

Bake in the preheated oven for 60 minutes. The cabbage should be tender and the bulgar cooked through.

Remove the foil and bake for an additional 10 minutes to slightly brown the top.

Let the casserole cool for a few minutes before serving. Enjoy your Spicy Lazy Cabbage Roll Casserole!

Like hamburger helper but upscale and healthy!

March 15, 2024

A really nice and simple casserole dish that has almost the quality of a hamburger helper product, but lighter thanks to the bulgar and with the cabbage replacing pasta. Filling and large - this recipe easily makes six servings, depending on your appetite. A very inexpensive light-on-meat dish.
