Ingredients

  • 8 slices bacon
  • 4 eggs
  • 4 slices bread
  • 2 tablespoons butter, softened
  • 1 teaspoon cooking oil
  • 1/4 teaspoon table salt
  • 1/4 teaspoon ground black pepper

Directions

Preheat the oven to 400°F. Place the bacon slices in a single layer on a baking sheet. If you have a cooling rack that is oven-safe, place it on the baking sheet and arrange the bacon on top for even cooking.

Bake the bacon in the preheated oven for 15 to 20 minutes or until crispy. The exact time will depend on the thickness of your bacon slices. Once done, transfer the bacon to a plate lined with paper towels to drain any excess grease.

While the bacon is cooking, heat a non-stick skillet over medium heat on the stove. Add 1 teaspoon of cooking oil to the skillet.

Crack the eggs into the skillet, being careful not to break the yolks. Sprinkle the eggs with 1/4 teaspoon of table salt and 1/4 teaspoon of ground black pepper. Cook for 2 to 3 minutes for sunny-side up eggs, or cover the skillet and cook for an additional minute if you prefer the yolks more set.

Remove the eggs from the skillet and set them aside on a warm plate. Using the same skillet, add the slices of bread to the pan. Spread 1/2 tablespoon of softened butter on one side of each slice of bread.

Toast the bread in the skillet over medium heat until golden brown, about 1 to 2 minutes per side. You may need to work in batches depending on the size of your skillet.

To assemble, place a slice of toasted bread on each plate. Top each with two slices of crispy bacon and then a fried egg.

Serve immediately for a warm and satisfying breakfast.
