Directions
Preheat oven to 375°F.
In a wok, heat vegetable oil over medium heat, then add yellow onions and minced garlic. Sauté until the onions are soft and translucent, about 3-5 minutes.
Add lean ground beef to the wok. Cook, breaking up the meat with a spoon, until browned and cooked through, about 8-10 minutes.
Stir in diced tomatoes, ground cumin, paprika, ground cinnamon, dried oregano, dried thyme, cayenne pepper, and bay leaves. Cook for another 2-3 minutes, allowing the spices to become fragrant.
Mix in tomato paste and vegetable broth, bringing the mixture to a simmer. Season with table salt and ground black pepper to taste. Simmer uncovered for 10 minutes, allowing the sauce to slightly thicken.
While the beef mixture is simmering, prepare the couscous according to package instructions, typically involving boiling water or broth, then adding couscous, covering, and removing from heat to let it absorb the liquid.
Remove the bay leaves from the beef mixture and discard. Stir in fresh cilantro and lime juice.
To serve, place a portion of couscous on each plate and top with the spiced beef and tomato mixture. Adjust seasoning with additional salt and pepper if necessary.
