Ingredients
- 200g quick oats
- 500ml almond milk
- 2 pears, diced
- 150g blueberries
- 60ml maple syrup
- 10g flaxseeds, ground
- 1 banana, mashed
- 5g ground cinnamon
- 5g vanilla extract
- 5g baking powder
- 2g table salt
Directions
Preheat the oven to 180°C.
In a bowl, mix the ground flaxseeds with 30ml of water to create a flax egg. Set it aside in the refrigerator for 15 minutes to thicken.
In a blender, combine the almond milk, mashed banana, maple syrup, vanilla extract, and the thickened flax egg. Blend until smooth.
In a large mixing bowl, combine the quick oats, ground cinnamon, baking powder, and table salt.
Pour the wet mixture from the blender into the dry ingredients in the large mixing bowl. Stir until well combined.
Gently fold in the diced pears and blueberries into the oat mixture.
Transfer the mixture into a greased oven-safe dish.
Place the dish in the preheated oven and bake for 30 minutes, or until the top is golden brown and the oatmeal is set.
Remove the oatmeal bake from the oven and let it cool for a few minutes before serving. This dish can also be refrigerated and enjoyed cold or reheated in the oven or toaster.
